History
1792 High Rye Bourbon was crafted in a distillery built next to Thomas Moore Spring in 1879. This location is significant due to the two natural springs on the property, which feature limestone that filters the water. The limestone not only removes iron but also enriches the water with calcium, making it ideal for bourbon production. The process begins with selecting the finest corn, rye, and barley, which are then cooked, fermented, and distilled. After distillation, the whiskey is placed into barrels, allowing it to mature. The tail box in the distillation process serves as a showcase, allowing distillers to sample the whiskey before it is barreled.
