This additive-free tequila is produced using single-estate Los Altos agave, slow-cooked in traditional stone/brick ovens. The agave is then crushed using a roller mill to extract the first-press free-run juice. Fermentation occurs in open-air stainless steel tanks with 100% wild yeast, and agave fibers are added to enhance flavor complexity. Distillation is carried out twice in small copper pot stills, incorporating agave fibers in the stills and using only the heads and hearts of the distillate. The tequila is bottled unfiltered by hand at the source, preserving its authentic character.
