Overview: To retain the natural characteristics of each varietal, we fermented the blend at cool temperatures. The Pinot Grigio, Viognier and Riesling were fermented 100% in stainless steel tanks to preserve delicate fruit aromas. Select lots of Chardonnay were fermented and aged on oak to add a touch of vanilla characteristics. A small portion of the blend was selected for malolactic fermentation, which enhanced character and mouthfeel.
Tasting Notes: Apothic White is a vibrant blend of white varieties grown in premier California regions. Notes of ripe peach, green apple, lemon zest and juicy pineapple layer on the smooth palate with richer, rounder hints of vanilla and caramel. Bright and crisp on the finish
