Cantina della Volta - 2018 Il Mattaglio - Brut Rose

Overview: "Il Mattaglio" is obtained from a selection of the best Chardonnay and Pinot noir grapes (rosé vinification) entirely gathered in small cases by manual harvesting.
The grapes are carefully handled in order to prevent them from crushing. A gentle pressing activity ensures that only the very best of the juice undergoes fermentation in controlled temperature stainless steel tanks. After resting at least six months, the wine receives selected yeasts prior to being bottled. Once the re-fermentation process is completed, the bottles are stored for over 24 months for a long maturation which confers a complex taste to the wine. It then undergoes the disgorgement and the addition of liqueur d'expédition (dosage).

Tasting Notes: Cherry pink dress. Floreal notes of wisteria, rose, violet. Fruity nots of strawberry, red citrus, cherry. It shows itself with finesse and elegance, in a harmonious dance between freshness and sapidity. Very balanced, engaging, juicy mouth. Gustatory
harmony leaves an indelible mark.
