Caol Ila Distillery on the Isle of Islay is famous for the stunning view from the still house windows looking out across the Sound of Islay and for the objects which have passed by including naval battleships, smugglers in dinghies, submarines and whales. Caol Ila Distillery was established in 1846 by Hector Henderson on a sheltered but rocky stretch of coast on north east Islay. Now the largest malt whisky distillery on Islay and visitors are welcomed at the distillery visitor centre where distillery tours are available. Caol Ila Distillery is a participant in Feis Ile, the annual Islay Festival of Malt and Music.

Nose: Wonderfully concentrated pure, clean Caol Ila – peaty and medicinal, with rich fruit, spicy and fragrant. With water, the fragrant smokiness comes singing through.

Taste: Sweetness and maltiness strike first, then are quickly overwhelmed by peat smoke and intense, clean, crisp flavours. Caol Ila’s signature smoky bonfires are here, and build to quite a size. Overall, drying, in a beautifully balanced, complex, elegant development, complemented with cinnamon spice.
