Crafted from fully mature 100% organic Blue Weber agave grown in the valley of Amatitán, Jalisco, each plant is selected at peak sugar levels for exceptional flavor. The agave is gently cooked in a low-pressure autoclave over a 24-hour cycle to preserve its natural sweetness. After a four-pass roller mill extraction, the juice is blended with pure volcanic spring water from Navichi Springs, then fermented in stainless steel vats with proprietary yeast. Double distilled in stainless steel pots with copper coils, the tequila is aerated and rested in stainless steel vats for one to three months to allow the flavors to settle and mature.
