Copalli Barrel Rested Organic Rum comes from the heart of Belize, crafted at the sustainable Copal Tree Distillery using locally grown, organic sugar cane. Made with just three ingredients—fresh-pressed sugar cane juice, yeast, and rainwater—this rum reflects the purity of its tropical surroundings. Distilled in both column and pot stills, it is matured in used American Oak bourbon barrels, allowing the rainforest climate to shape its character naturally.  

This barrel-rested rum offers a rich and smooth profile, balancing natural sweetness with warm oak and spice. Notes of caramel, vanilla, and honey blend with hints of baking spices and a subtle earthiness, a reflection of its sugar cane origins. The time spent in bourbon barrels enhances its depth, creating a layered and satisfying finish that lingers with a touch of oak and soft smoke.  

At 44% ABV, Copalli Barrel Rested Rum is bold yet refined, best enjoyed neat or on the rocks to appreciate its complexity.
