Commercial Description:
The barley variety Optic was grown in the South fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa during the summer of 2007.
TASTING NOTES
On the nose, there is freshly baked apple pie, made with the green granny smith type apples. Madeira cake and almonds or marzipan. Over time the marzipan tends to dominate. The addition of water brings out more fruitiness.
This continues onto the palate with the little spice and white pepper
The finish is long and dry with oak and citrus peel
