Here at the edge of a lake in a shed in a small Irish town, the ordinary is made extraordinary. Within is the laboratory of PJ Rigney, boundary-pushing begetter of hand-made spirits.
On the first sip of this core gin, you taste the care that went into finding this unique-yet-balanced flavor. It comes across a slightly sweet, with a mild array of botanicals and citrus. The distinct elements that are easily identified are: juniper, coriander, anise, and grapefruit. On the finish, there are some hints of tea and lemon.
