Pechuga production is a Oaxacan ceremonial tradition tied to weddings, festivals, and significant celebrations — the “Jolgorios” (festivities) that give the brand its name. During the final distillation, a whole protein (most commonly chicken breast, the original “pechuga”) is suspended alongside seasonal fruits, nuts, and spices, with the vapors passing through to capture aromatic and structural character from each. El Jolgorio represents 16 different Oaxacan families across 10 regions, with each bottle hand-marked to connect the drinker directly with the producer.
