Mezcal, Cuishe, Rey Campero

• Mezcal produced in Candelaria Yegolé, Zoquitlán, Oaxaca • Maestro Mezcalero Vicente Sánchez Parada • Made from 100% Cuishe (Agave karwinskii) • Cooked in a traditional earthen pit oven • Milled using a traditional stone tahona  • Open-air, spontaneously fermented in pine and cypress vats (tinas) using river water • Distilled twice using copper pot stills  • Tomatillo, ginger, fresh hay, and orange zest dance on the palate, followed by a delicate note of honeydew • 48.3% ABV (ABV may vary batch to batch) The light-on-its-feet character of this mezcal belies the feisty Cuishe (Agave karwinskii) from which it was made. An unusually bright and refreshing expression among the often-brooding distillates seen from Rey Campero.
