New Deal Distillery Cascara Liqueur is a Portland craft liqueur built around cascara — the dried fruit pulp of the coffee cherry, the rarely commercialized by-product of coffee bean production. Made by New Deal Distillery (Distillery Row, Portland, OR, est. 2004) in small copper pot stills using Bull Run water and locally sourced natural and organic ingredients at 25% ABV.

Cascara is one of the more unusual ingredients in commercial liqueur production — it has been used historically in Latin America as a sweetened tea (“agua de cascara”) before recent specialty coffee culture brought it to wider attention. The flavor profile differs markedly from coffee bean expressions: cascara delivers raisin, candied fig, dried apricot, honey, and baking spice notes rather than the roasted coffee character of cold-brew or coffee-bean-based liqueurs.
