Pure, Mineral and Classic Chablis
Val de Mer is the second winery of acclaimed Chablis winemaker Patrick Piuze, created in partnership with Moutard-Diligent. The project follows much of the same philosophy as Piuze’s celebrated namesake wines, emphasizing careful sourcing, hand harvesting, spontaneous fermentation and a transparent expression of Chablis terroir.

The 2023 Val de Mer Chablis is produced from Chardonnay grown in three parcels: Des Couverts in the village of Chablis, Préhy near Courgis, and Lignorelles. The wine is fermented and aged entirely in stainless steel, preserving freshness, purity and the naturally mineral character for which Chablis is renowned.

Tasting Notes
Bright, crisp and beautifully focused, the 2023 opens with fresh lemon, green apple and subtle orchard-fruit notes. The palate is clean and energetic, combining refreshing acidity with a distinctly mineral character and a lightly saline quality. Citrus and green apple carry through the finish, which is precise, refreshing and wonderfully food-friendly.
