This is one of the most elevated and distinct Marc de Bourgogne (basically aged grappa from Burgundy) that we have tasted in the last number of years. Made up of vapor distilled Pinot Noir pomace (spent skins and seeds) this was aged for eight years in ex-Cognac barrels. The nose is quite complex and so very interesting with a mix of honeycomb, light spice, dried citrus peels, cedar and a sandalwood.
