La Mesa — Spanish for "the table" — is a flat field perched atop a hill at 6,225 feet in the Los Altos Highlands of Jalisco, its name a direct reference to the elevated plateau on which it sits. The ranch is distinguished by a dual soil composition: the iron-rich red clay native to the Highlands alongside surrounding volcanic gray clay — two soil types whose overlapping mineral profiles contribute to an agave character that is at once rooted in the classic Los Altos terroir and shaped by the specific geological conditions of this elevated flat. Blue Weber agave harvested from La Mesa in 2025 averaged 33 pounds per piña at a sugar content of 31%, figures that reflect the long, unhurried maturation the Highland climate demands before the Camarena family considers a field ready to harvest.

Production follows Tequila Ocho's traditional methods throughout — the harvested piñas slow-cooked in stone hornos, fermented naturally, and double-distilled at La Alteña before the spirit enters heavily used American whiskey barrels for four to six months of reposado aging. The choice of overused barrels — wood that has given the majority of its extractable compounds to previous fills — is deliberate: the goal is to introduce the subtlest possible oak polish without displacing the La Mesa field's native aromatic signature. The resulting spirit is blended from only a few dozen barrels at a time, then bottled without chill filtration and without dilution at cask strength of 50.5% ABV / 101 proof — a proof point that preserves the full texture and concentration the spirit developed in the barrel.

The nose opens with rich cooked agave, honeyed sweetness, and light citrus peel, layered with vanilla, herbal minerality, and the volcanic gray clay's characteristic earthy depth. The palate is full and oily at proof, with roasted agave, butterscotch, cinnamon, and a developing praline sweetness moving through the mid-palate alongside white pepper and a faint tobacco note that the La Mesa terroir consistently expresses in its reposado expressions. The finish is long and warming — sweet agave and peppery spice in sustained equilibrium, resolving slowly into a final whisper of oak that closes the expression without obscuring its field of origin.
